BRASSERIE BLANC FARNHAM

Brasserie Blanc Farnham occupies a fine grade-two* listed Georgian building with many original features located on Castle Street in the town centre. The local conservation department wanted some of the building’s existing deficiencies rectified as a condition of planning consent. The detailing of the new restaurant has been undertaken with a great deal of sensitivity to the original building. French doors that lead out to the rear garden have been designed to match the glazing profiles of the adjacent Georgian windows. Reinstated fireplaces incorporate hand carved Bath stone surrounds. Original plaster cornices, panelled doors and architraves have been carefully matched throughout. One of the main challenges was to introduce a commercial kitchen among the many listed features. An innovative form of extraction was developed, which does not require an overhead canopy. This ensured that the decorative plaster ceiling and cornices remain intact and untouched.
